Yesterday was a frustrating day to cook. I was trying to find a recipe for some sweet comfort food for a friend, but we were out of sugar and making comfort food without sugar is dang near impossible.
I randomly picked up a Women's Day magazine we had laying around and there were recipes for using up leftover turkey, which was perfection considering that my mom roasted a turkey last week and we have tons of it still in the fridge!
It's healthy, tasty, and it keeps in the fridge, so you've got dinner for the rest of the week.
Here's how you do it:
What you need:
1.5 cups of turkey, cut into bite size pieces
.5 box of oven ready lasagna noodles
1 can diced tomatoes
.5 can of spaghetti sauce
3 cups spinach, torn into mouth manageable pieces
2 cups shredded mozzarella cheese
1.5 cups of ricotta cheese
1 egg
garlic, black pepper, and italian spices to taste
What to do:
1. turn oven on 375 degrees and spray a 12by8 casserole dish with cooking spray
2. beat an egg and mix with the ricotta. add pepper, garlic (i used 2 cloves of minced), and spices.
3. spread enough of the tomatoes to cover the bottom of the pan. layer the noodles (overlapping slightly) over the tomatoes. next add the ricotta mixture as a layer, then the turkey, then spinach, then more noodles, then more tomatoes (or spaghetti sauce). Finish by liberally covering with mozzarella cheese.
4. Bake for about 35 minutes, or until bubbling all the way through.
5. Take out of oven and let sit for 5-10 minutes and enjoy!
