bacon pancakes!

this week has been a week filled with pizza, chocolate, ice cream, margaritas, and other unhealthy food items (hey it's my birthday week, don't judge).  i had the morning off today, so i decided, in honor of turning 23 (official adulthood), i would make myself baconcakes, as seen on my new blog obsession, The Londoner.


oh. my. gracious.  best things ever and easier than easy to make.


Things needed:
2 cups pancake mix: i used the heart healthy bisquick (yes, i did take a moment to chuckle at the irony), but depending on the type, you may need more ingredients (eggs, milk, ect).  i'm going to replicate this in a couple weeks when my fam goes camping, but using hungry jack instead cause you only have to add water.

half pound of bacon (1/2 package)

What to do:
1. put bacon on the griddle to start frying. while waiting, mix up the pancake batter.

2. once bacon is done, take it off the griddle, pat dry, and wait to cool.  once cooled, cut the pieces in half with scissors.

4. wait the batter is filled with bubbles (3-4 minutes) and then flip. let cook for another 2-3 minutes. and...
so easy. so delicious.  top with syrup/strawberries/blueberries.
