bbq chicken salad

perfect girls night dinner. pair with best friend, a Sandra Bullock movie, and last minute trips to Barnes&Noble


How to:
1. bake boneless/skinless chicken breasts for 45 min (or until white inside) with your favorite BBQ sauce on top. I love Sweet Baby Ray's.
2. wash and tear lettuce. crush tortilla chips into bite size pieces and sprinkle over lettuce. add shredded cheddar cheese.
3. strain a can of black beans and corn. add desired amount. 
4. slice the bbq chicken and add.  about half a breast for each salad should work.
4. desired salad dressing. i suggest something southwest-y like ranch or honey mustard. i used creamy parmesean.
5. serve with cornbread and TAY.

i'm not exactly an artistic genius with my post titles this week, am i? well you wouldn't either if you were ready for it to be summer, but the weather persisted in being gray and rainy and cold.

Is there anywhere in the world that you really would love to visit?

Maybe you'd love to see lions in Africa or walk the Great Wall of China?

If you've been reading this blog for a while, you might know that my original plan was to spend this year in Sweden as a missionary. Although I am now grateful that God changed my plans (and offered me so many wonderful opportunities here in my hometown instead), I would still love to visit Scandinavia at some point during my life.

weekend at jaclyn's

sad news, i've been sick, so my pictures today won't be terribly interesting. most of my weekend was spent blowing my nose, sleeping, and generally feeling sorry for myself. ha.

on the upside though, i found a FREE photoediting program that let's you make your pictures all cool and instagram-like. take that apple. it also let's you do simple editing (crop, brightness, ect.) and has tons of super cool effects. best part, you don't even have to download it! it's all online! check out phixr to try it out.

so please excuse the excessive hipsterness of today's pics; i'm basking in the success of beating iphone users in their own game.

3. hands
despite my general grossness, my sweet boyfriend came from raleigh to bring me cough drops and watch the entire 'lord of the rings' series with me. he didn't even get mad when i fell asleep.

coffee, coughdrops, and computer. checkin the blogroll before church this morning.

as you may have noticed, i have been inconsistent and just generally BORING on this here blog. the creative juices haven't been flowing much lately. in an attempt to post more consistently AND perhaps brainstorm interesting things to say, I'm doing the photo-a-day challenge at fat mum slim.

As you may or may not have noticed, it is already the second day of feburary. holy smokes batman! so imma do two piccy's today. also, as i don't have an iphone (am I the only one on the planet?), they won't be cute instagram-y photo's, but blurry ones taken on my LG.

hotel song

I realized that I'm a super bi-polar eater. Half the time, I'm uber pretentious and complain about pesticides in our produce and stuff like that, and the other half I'm eating a box of Teddy Grahams in one sitting.

I had this revelation last weekend while I was out of town and documenting the places we ate on my camera phone.

Here is me drinking out of a styrafoam (gasp!) cup and marvelling at our hotel room, which had flat screen tv's and Aveda products in the bathroom. It was pretty fly, let me tell you.

Now I'm back in the dash, dog sitting two cute little puppies that find it hilarious to eat my bagel when I set it on the couch and walk out of the room (clearly I'm not ready for pets or motherhood).  It's hard to stay mad though, when we're all snuggled up in the living room watching Parks&Rec on netflix. It's probably the best case scenario for a rainy-sick day.
